Hungarian Chicken Recipe - Cirke Paprikas

My mom, who was Hungarian, gave me this chicken recipe. Cirke Paprikas (Chicken Paprikas) chicken breasts (I use boneless) butter chopped onions Hungarian paprika (not the cheapo kind, the good stuff from specialty food stores…there really is a difference) salt and pepper sour cream Melt butter in a large skillet with lid and saute onions. Add chicken breasts and brown them in butter. If the pan starts to dry out, keep adding more butter. (This is not a low-fat recipe!) Add salt and pepper to chicken, and sprinkle liberally with paprika while cooking. When chicken is thoroughly cooked, push it to the side of the pan, turn the heat down and add a few big dollops of sour cream. Warm up the sour cream and stir it in with the juices in the pan. Add more paprika if necessary so the sauce is a pale pinkish color. Heat thoroughly and spoon over the chicken breasts. Serve with egg noodles.
